OCR tools and methods

Sorry if this has been done (to death) but I couldn't find it in the discussions.
Old man in Analysis, newbie to this forum...

Apparently, Adobe 9 OCR not only recognizes lines of data, but colums, too. I have yet to discover how to control this behavior, having it recognize tables as tables, but lines of data as lines and not columns. (Rebuilding lines from column captured data is a bother).

Do any of you have advice on:
+ the OCR engine inside Adobe 9
+ OCR packages pther than Adobe
